Ingredients
1 1/2 lbs boneless skinless chicken breasts, cut into bite-sized pieces
2 medium zucchinis, thinly sliced
1 pint cherry tomatoes, halved
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1 tbsp olive oil
1 tsp dried oregano
1 tsp dried basil
1/2 tsp smoked paprika
Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C)
In a bowl, toss chicken bites with garlic and herbs
Heat olive oil in an oven-safe skillet or sheet pan, sauté chicken until browned (4-5 mins)
Add sliced zucchini and cherry tomatoes to the pan, season with salt and pepper
Turn off heat and top with mozzarella cheese
Bake for 25-30 minutes until cheese is golden and zucchini is tender
Notes
Use fresh herbs if available; substitute Parmesan with vegan cheese if needed
Can add red onion or bell peppers for extra flavor
Let rest 5 minutes before serving for neater slices
