Ingredients
1 lb chicken breast, boneless and skinless (halal-certified if preferred)
4 slices beef bacon (halal or non-pork alternative)
2 large eggs, boiled and sliced
2 ripe avocados, halved and pitted
2 cups mixed greens (romaine, spinach, and butter lettuce)
1/2 cup cherry tomatoes, halved
3 tablespoons mayonnaise
1 tablespoon dijon mustard
2 tablespoons honey
1 clove garlic, minced
1/2 cup blue cheese crumbles
2 tablespoons croutons, large
1 teaspoon vinegar (apple cider or balsamic)
Salt and black pepper, to taste
Instructions
Season chicken breast with salt, pepper, and minced garlic
Heat a skillet over medium heat and cook beef bacon until crispy
Remove bacon, then cook chicken breast in the bacon drippings until golden and cooked through
Meanwhile, prepare honey mustard dressing by whisking mayonnaise, dijon mustard, honey, and vinegar
Toss mixed greens with a portion of the dressing to coat lightly
