Ingredients
3 cups shredded rotisserie chicken or cooked boneless skinless chicken breast
4 cups cauliflower rice (store-bought or finely chopped cauliflower)
1 cup cream cheese (or Greek yogurt)
1 cup shredded cheddar cheese
1/2 cup mayonnaise
1/2 cup milk (or non-dairy alternative)
1 small onion, minced
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
2 tablespoons olive oil
1/4 cup grated Parmesan (optional)
Instructions
Preheat oven to 375°F (190°C)
Heat olive oil in a skillet, sauté onion and garlic until fragrant
Add cauliflower rice and cook 5-7 minutes until tender
In a large bowl, combine cooked cauliflower rice, shredded chicken, cream cheese, mayonnaise, milk, salt, pepper, and paprika
Mix well and transfer to a greased 9×13-inch baking dish
Top with shredded cheddar cheese and optional Parmesan
Bake for 25 minutes until golden and bubbly
Let rest 5 minutes before serving
