Ingredients
4 boneless, skinless chicken breasts (about 4 lbs total)
Juice and zest of 3 fresh limes
1/2 cup finely chopped fresh cilantro (packed)
3 tablespoons extra virgin olive oil
2 tablespoons honey (or other natural sweetener)
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Preheat grill to medium-high heat (around 375°F/190°C)
In a large bowl, whisk together lime juice, lime zest, cilantro, olive oil, honey, minced garlic, salt, and pepper
Submerge chicken in the marinade, ensuring each piece is well-coated. Cover and refrigerate for 30-60 minutes
Remove chicken from marinade, shake off excess, and place on the preheated grill
Cook for 6-8 minutes per side, or until charred and internal temperature reaches 165°F (74°C)
Rest for 5-10 minutes before slicing and serving
Notes
Use skin-on thighs for juicier results if preferred
For extra marinade depth, refrigerate overnight
Adjust honey amount to taste
Ensure grill grates are clean and well-oiled to prevent sticking
Serve with warm rice, corn tortillas, or fresh avocado slices as accompaniments
