Description

Ingredients

1 lb (450g) chicken breast, cubed
2 bell peppers (any color), cut into 1-inch pieces
8 cherry tomatoes
1 medium red onion, cut into 1-inch pieces
1 cup mushrooms, halved
2 tablespoons olive oil
2 tablespoons fresh lemon juice
3 garlic cloves, minced
1 teaspoon ground oregano
1 teaspoon ground cumin
1 teaspoon paprika
Salt and black pepper to taste
46 wooden skewers (pre-soaked in water for 30 minutes)


Instructions

Combine chicken in a bowl with olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper. Marinate for 15–30 minutes.
Thread marinated chicken and vegetables alternately onto skewers.
Preheat grill to high heat. Grill kabobs for 10–12 minutes, turning occasionally, until chicken is cooked through and veggies are tender with char lines.
