Ingredients
2 boneless, skinless chicken breasts
6 cups mixed greens
2 cups sliced fresh strawberries
1 cup crumbled feta cheese
1/2 cup sliced red onion
1/2 cup toasted almonds
3 tbsp olive oil
1 tbsp balsamic vinegar
1 tbsp honey
1 tsp Dijon mustard
Juice of 1 lemon
Salt and pepper to taste
Instructions
Preheat grill to medium-high heat
Season chicken breasts with salt and pepper
Grill chicken for 6-8 minutes per side until fully cooked; let rest, then slice
Wash and dry mixed greens
Slice strawberries, red onion, and toast almonds in a skillet
Whisk olive oil, balsamic vinegar, honey, Dijon mustard, and lemon juice for dressing
In a large bowl, combine greens, strawberries, red onion, feta, and toasted almonds
Top with sliced chicken and drizzle with dressing just before serving
Notes
Substitute almonds with walnuts or pecans if preferred
Omit feta for a vegan version and use vegan cheese
