Description

Tender lemon-garlic chicken thighs, slow-cooked to perfection with potatoes, onions, and asparagus in a fragrant, zesty sauce. A cozy, flavorful dish perfect for busy meals.


Ingredients

4 bone-in, skin-on chicken thighs
2 lemons, juiced and zested
4 garlic cloves, minced
2 tablespoons olive oil
1 tablespoon honey
2 cups baby potatoes, halved
1 red onion, quartered
1 bunch asparagus, trimmed
Salt and pepper to taste


Instructions

Combine chicken, lemon juice, lemon zest, garlic, olive oil, honey, salt, and pepper in a slow cooker.
Add baby potatoes and red onion.
Cover and cook on low for 7–8 hours or high for 3–4 hours.
30 minutes before the cooking time ends, add asparagus.
Remove chicken from the slow cooker and let rest for 5–10 minutes before serving with vegetables and sauce.


Notes

Use fresh lemons and asparagus for the brightest flavor.
Serve with rice, quinoa, or crusty bread to soak up the juices.
