Description

A vibrant, slow-cooked Mexican-inspired chicken dish made with tender chicken breasts, cream cheese, zesty seasonings, beans, and corn. Perfect for busy weeknights or gatherings, it’s packed with flavor with minimal effort.


Ingredients

4 boneless chicken breasts
8 oz cream cheese
1 cup salsa
1 tsp taco seasoning
1 tsp ranch seasoning
1/2 tsp cumin
1 can black beans, drained and rinsed
1 can corn, drained
1/2 can green chilies, drained
1 tbsp olive oil
Salt and pepper to taste


Instructions

Rub chicken breasts with olive oil and season with salt and pepper.
In a bowl, mix cream cheese, salsa, taco seasoning, ranch seasoning, and cumin until smooth.
Place chicken in the slow cooker and spread the cream cheese mixture over the top.
Add black beans, corn, and green chilies around the chicken.
Cover and cook on low for 6–8 hours or high for 3–4 hours.
Once done, stir the ingredients together and serve warm.


Notes

For a spicier kick, add 1/4 tsp chili powder to the seasoning mix.
Serve with cooked white rice or crushed tortilla chips.
Leftovers store well in the refrigerator for up to 4 days.
